Uniswap is a decentralized exchange (DEX) protocol built on the Ethereum blockchain that allows for the trading of Ethereum-based ERC-20 tokens directly from user wallets. It was created in 2018 by developer Hayden Adams.

Unlike traditional, centralized exchanges, Uniswap doesn't match buy and sell orders in an order book. Instead, it uses an automated liquidity protocol, which means that it has a series of liquidity pools that users trade against. These pools are funded by other users who provide liquidity by depositing their assets into the pool and maintaining a balance of both assets.

In return for providing liquidity, these users earn fees generated from the trades that happen in their pool, proportional to their share of the total liquidity.

Uniswap's protocol operates on the concept of automated market makers (AMMs), where prices are determined by a mathematical formula which depends on how much of each token exists in a pool.

In 2020, Uniswap launched its second version (V2) and its own token, UNI. The UNI token serves multiple purposes within the Uniswap ecosystem, including governance voting rights. Uniswap V3 was launched in 2021 with several enhancements like concentrated liquidity and multiple fee tiers which provide more flexibility to liquidity providers.

Uniswap has played a significant role in the DeFi (decentralized finance) boom, as it offers a trustless, permissionless platform for exchanging tokens, providing liquidity, and earning income through liquidity provision. As of my knowledge cut-off in September 2021, Uniswap has been one of the highest-volume DEXs in the cryptocurrency market.
